Start by peeling and trimming your carrots. Cut them into thick slices for optimal caramelization. Heat olive oil in a pan over medium heat, then add the garlic cloves, letting them sizzle gently to impart their flavor without burning. Add sliced carrots to the pan along with thyme sprigs, salt, pepper, and cinnamon. Cook, stirring occasionally, until the carrots are tender on the inside and caramelized on the outside, around 10-15 minutes.

Remove from heat and crumble goat cheese evenly across the top of the pan-seared carrots. Let it rest for a couple of minutes to allow the goat cheese to soften slightly before serving warm.
